So, I work with this consultant who is a seasoned expert in the ice cream business. And when I told him that I planned to make a pineapple ice cream he thought I was nuts. “Pineapple is a summer flavor!” he exclaimed. “You really think people are going to buy pineapple in the winter?”

I have every intention of finding out whether all of you wonderful people will buy pineapple ice cream in the winter. BUT it isn’t JUST pineapple. Its pineapple roasted in the oven with some brown sugar. Its homemade caramel laced with blackstrap rum brought back by a friend from a vacation. Ahhhh, vacations….remember those? Those were so cool.

Take a mini vacation and enjoy some umbrella drink* goodness in ice cream form.
